Cucumber, Mint & Yogurt Bowl

A five-minute side dish for warm bread, roasted vegetables or a crowded summer table.

Some recipes are less about invention than proportion. Cucumber brings water and crunch, yogurt brings body and tang, and mint keeps the whole bowl awake.

Fresh spearmint is ideal. Chop it just before mixing and use a sharp knife so the leaves stay green rather than bruising into the board. If the cucumber is very watery, salt it lightly and let it drain for ten minutes first.

Dried culinary mint can work when fresh is unavailable, but use less and let the finished bowl rest for ten minutes so the leaves soften. Tea bags are for the cup, not the salad. Even a very charming pantry needs boundaries.

Cucumber, Mint & Yogurt Bowl

A cool, savoury yogurt bowl with cucumber, mint and lemon.

Ingredients

  • 2 cups plain full-fat Greek yogurt
  • 1 medium cucumber, thinly sliced or diced
  • 1/4 cup finely chopped fresh spearmint
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon extra-virgin olive oil
  • 1/2 teaspoon fine salt, plus more to taste
  • Freshly ground black pepper

Method

  1. 1Combine the yogurt, lemon juice, olive oil, salt and a few turns of black pepper.
  2. 2Fold in the cucumber and chopped mint.
  3. 3Taste and adjust the salt or lemon. Serve immediately, or chill for up to one hour.

For dried culinary mint, begin with 2 teaspoons and rest the mixture for 10 minutes before tasting.
